As people who frequent craft beer bars for work and for fun, there is certain beer knowledge we take for granted. One of those things is why there’s a glassware rinser located on the grate of our tap drain. Oftentimes, brewery first timers stare in wonder as we turn their impending chalice upside down, press it down on the grate, and spray it with… what is that? Water?
What on earth are we doing?
Why do we rinse our glasses if they’re supposedly clean?
There is a perfectly good answer for all of these questions! According to the Cicerone® Certified Beer Server training program, rinsing a glass with water before use has three functions:
